Miso

I've rediscovered miso soup and I find it an easy,healthy, satisfying lunch or snack. As far as soy goes its one of the best ways to eat it. It comes in a variety of kinds, light, dark... You may want to experiment to see what your palate likes best. I prefer the light myself. You can make miso soup very simple by boiling water, placing a tablespoon of miso in a cup and pouring the water over it. Mix and drink it up. I prefer to add either chopped green onion or steamed vegetables.
The key to keeping the nutrients alive is to never boil miso. Add the miso paste after the water boils and then you can simmer for a bit if you are adding tofu, vegetables...

The other way to get a healthy dose of miso is to make homemade salad dressing.
1/4 cup miso
2 tbsp rice vinegar
2 tbsp soy sauce
2 tbsp sesame oil
1/2 tsp minced fresh ginger OR 1 tsp ginger powder
water as needed (optional)

Use a fork or whisk, beat until smooth. This will keep in refrigerator for a week.

Give it a try, notice if it feels good in your body.
