A Salad

Mark made this salad the other evening. The dressing is a unique flavor and gave this salad a delicous richness.

1 apple chopped finely
1/2 head of lettuce, red or green leaf chopped finely
1 cup cooked brown rice
1-2 red/yellow bell peppers
1/2 cup toasted walnuts
1 cup grated carrots
You could add any other vegetable you have available that you enjoy eating raw. This serves approximately four people.

Dressing
2 tablespoons goat cheese
1/2 avocado
1/4 cup water
3-4 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
dash of salt to taste
blend until creamy (hand blender works great if you have one)

Toss and serve!
